Ingredients:

For the meatballs:

  • 1 cup raw walnuts
  • 1/2 cup sun-dried tomatoes (soaked in water for 10 minutes)
  • 1/4 cup nutritional yeast
  • 1/4 cup fresh parsley leaves
  • 2 cloves garlic
  • 1 tbsp soy sauce
  • 1 tsp dried oregano
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

For the sauce:

  • 1 cup fresh tomatoes, chopped
  • 1/2 cup sun-dried tomatoes (soaked in water for 10 minutes)
  • 1/4 cup fresh basil leaves
  • 2 cloves garlic
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper

Instructions:

  1. Add the walnuts to a food processor and pulse until they are finely chopped.

  2. Add the sun-dried tomatoes, nutritional yeast, parsley, garlic, soy sauce, oregano, sea salt, and black pepper to the food processor. Pulse until the mixture is well combined and forms a ball.

  3. Roll the mixture into small balls and place them on a plate. Refrigerate for at least 1 hour to allow the meatballs to firm up.

  4. To make the sauce, add the fresh tomatoes, sun-dried tomatoes, basil, garlic, sea salt, and black pepper to a blender or food processor. Blend until the sauce is smooth and creamy.

  5. Serve the meatballs with the tomato sauce on top, or on a bed of zucchini noodles or your favorite raw vegan pasta.
